This Creamy Corn Spread can be used as a Spread or a Dip with Chips
I was honestly digging around the house for what was leftover in terms of ingredients and wanted to create a corn dip or spread. I had a couple of cans of corn and some leftover vegan cream cheese from making my verde chili recipe.

2 15oz cans Corn
1 can rotel
1 8oz container of plant-based cream cheese
1 tbs lime juice
1 tbs garlic powder
1 tbs nutritional yeast
2 tsp seasoning salt
1 tbs fajita seasoning
1 tbs balsamic vinegar
Slap Ya Mamma to taste
How To:
PREP:
STEP 1:
Pour the two cans of corn into a skillet adding all the seasoning salt and balsamic vinegar.
STEP 2:
Let the corn cook in the skillet and roast in the pan much as if you're saute'-ing the corn like onions. We want some grit to them. Add a little water to do so if needed or extra balsamic.
STEP 3:
Once the corn is cooked and soft add the remainder of the ingredients saving the Paprika or Slap-Ya-Mamma for last.
STEP 4:
Cook until fully creamy and full of flavor.
STEP 5:
Serve hot or chill for later.
