Many times in the past my mealtime at work was one of the worst meals I would eat. I ate out at least four times a week at work. Not only did I eat out that much, but I ate junk each time I ate out as well. No one goes out to eat and is in 100% control of their diet. As much control as you think you have, you don't know exactly how it's prepared behind closed doors in the kitchen. You can ask all the right questions, do all the correct research ahead of time and take all the best suggestions and not really be in total control of your diet.
One of the things I needed to do was be in control of my lunches and my diet on those lunches. So in a quest to feel like I was eating "normal" I tried to make some deli-style sandwich or meals. I was trying to put together something that would be fresh, filling and satisfying when I go to work so I didn't snack all day long. In the end I put together a collection of sandwich and sandwich style meals I could prep ahead of time and take to work for the week.
First I put together a raw compilation of vegetables to create a slaw style filling for either pita bread or a lettuce wrap. Then I put together a slider that would have a close correlation to the Hawaiian roll sliders. These are filled with veggies and are easy to individually wrap and take to work. Then finally a nice hardy, hoagie style sandwich that is rich and full of flavor.
