So I began this journey about four years before putting this together and a couple of years in we got to know some friends in our church fairly well.  We got into a small group with them and found they were eating the same Whole Food Plant Based Lifestyle that our family had adopted a couple years before.  That was really exciting for both Laurie and I because sometimes it feels like you're on an island eating this way, meal-prepping this way and living this way.

So our friend Lyndsay put together some lintel based Sloppy Joes that were a great every-day go-to meal.  It's a great go-to weekday or weekend meal.  Then she comes up with a fantastic Vegan Mexican Pasta meal that can be eaten just the same for just about any meal.  Man, it's great to have friends.

Finally I know there are thousands of versions of protein bars out there.  I gotta tell you, this simple vegan version my wife created has been the go-to for me on a big run, ride or swim day before and if it's a big endurance ride like 50 or more miles or a run longer than 10mi I almost always have one to follow-up in recovery.
