I have dealt with mild depression throughout my entire life and it has primarily been seasonal or intermittent.  In the past when I had these moments I would turn to food to fill the depression void.  I wanted to have some meals available that would fill that void with food that was both comforting and healthy.  So I started with a Shepherds Pie that just hit's the spot.  We've had that meal with just our family as well as with others visiting and it's a hit every time.  Then I was just craving a baked potato soup with a flair and used a combination of a couple of my recipes to create a Hatch Chili flavored Potato Soup.  Made correctly this is a good one.  Finally trying to get the kids involved I ended up making a Tater-Tot Casserole.  It really is in the vein of the Shepherds pie and I love it.

There are just some times in life when you want to feel comforted, whether it's just a tough time in life, it's cold outside or you just feel like you need a hug we all long for comfort food from time to time.   These three meals are kind of varying in their level of healthy versus comfort, but all are vegan and the Shepherds pie can be made WFPB.
