As of doing this, the last couple of years of my life has been a crazy.  I started by running a 10k in feb of 2020 just before covid shut everything down.  Then losing some of my health I had gained during the first 6-8mo of COVID.  A friend challenged me to do a 1/2 Marathon with him so I began the journey back and ended up doing my first 1/2 Marathon in March of 2021.  Then having nothing to train for a couple of fairly new friends challenged me to join them in a triathlon.  I had never biked or swam in an event at all.  I didn't know how to do either one competitively before that so in April I started training with a friends cheap road bike and by going to a local pool every once in a while.  In May I ended up competing in my first triathlon at Sylvan Beach (outside of Houston) in a sprint triathlon.  I really enjoyed the race and ended up signing up for an Olympic distance race in Waco.  It was there that I did my first one...and I loved that one.  I decide I enjoyed the long-course a bit more than the short course.  So after doing a significant amount of training on the ride I decided I would start training for a 1/2 Iron Man distance race or a 70.3mi event.  Training was going really well and I was really feeling like I had an opportunity to do well in a race in October.  A couple of days before I was to sign up for that race I was out on a training ride with a friend and hopping at a good pace when I tried to slow down quickly and ended up going right over the front of my handlebars.  I was fortunate that the only injury was to my shoulder where I broke the lateral end of my clavicle and completely severed my A/C Ligament.  The clavicle had to be surgically put together with screws and a plate while the ligament was put back in place as well.  As of writing this I've been on 8 weeks of recovery and still going...this year has been crazy.

So with all of that my diet has been up and down and up and down.  It's been hard with the need for my calories changing up and down so often to keep weight consistent.  So with that I looked at several meals I could make that I could just eat a ton of without being a calorie issue.  That way no matter the load I had some good healthy food I could eat in any circumstance.

With that I created a simple Vegan Naan Bread Pico Pleaser as well as the Avocado Stuffer that uses the same basic pico filler.  Then a Vegan Seafood Spread that's amazing as a dip as well as a pita filler or lettuce wrap.
