I wanted to have a lunch meal that would be light and refreshing like having a cold lunch-time sandwich. This veggie pita stuffer fit the bill perfectly.
Ingredients
Ingredients
Pita bread – 1 pkg
Garlic based hummus (store bought or homemade) – 12oz
Guacamole – (store bought or homemade) – 6-8oz to taste
Red Bell Pepper – 2/3 Pepper – diced
Yellow Bell Pepper – 1/2 Pepper – diced
Green Bell Pepper – 1/2 Pepper – diced
Red Onion – 1/8 cup – chopped
Pickles – 4 – chopped large pieces
Organic Brussel Sprouts – 6 – chiffonade
Lime Juice – 6tbs
Minced Garlic – 2.5tbs
Low Sodium Slap ‘ya Mama – 1tbs
Chopped cilantro – 1/8 cup – chopped finely
Baby Carrots – 16 – julienne
Add Pickle-Juice – as needed to taste
HOW TO:
FILLER:
First combine the hummus & guacamole in a bowl.
Then cut the vegetables adding them to the mixture as you go. Finally add the remaining ingredients and mix them all together.
Adjust all ingredients labeled “to taste,” as stated.
(you may have to play a little)
MAKING SANDWICH:
Cut Pita in two pieces then use a plastic knife or the like to spread the pita open and add desired amount of filling.
